Aan Nurhasanah, The Ritz-Carlton Jakarta, Pacific Place’s Pastry Chef is one of the most responsible person when it comes to the beauty of the pastry products. With over 15 years experience, baking is surely as easy as a piece of cake for the Pastry Chef. Although the hotel itself does not open a cake shop, due to the confined space, Chef Aan serves hundreds confectioneries in day to day basis for banquet, which takes place at the hotel’s ballroom. The ballroom is claimed to be the biggest assembly room in Asia with capacity of ten thousand persons.
“Baking is easy. What is a bit hard in my job is to train the youngsters,” told Chef Aan. It is her duty to work with twenty five Chefs in her department, ten of them are trainees. These apprentices are given the opportunity to learn from Chef Aan for six months, and afterward another ten coming for another six months and so on. Although the training and managing duty has kept her hands busy, her hard works are highly praised from the hotel as she received The Ritz-Carlton Culinary Rising Star 2010.
